This is a real treat. No, I am not completely a raw foodist, but I believe, as a wife and mom, that it’s important to introduce my family to as many healthy eating treats as I possibly can.

So, at Thanksgiving I can’t forgo the traditional meal, but I have healthy alternatives to taste as well.  This is one of them.

Raw Pumpkin Pie may sound a bit harsh to the taste buds, but you’ve got to try it. It even comes with “raw” whipped cream.  I think it is very satisfying.  See what you think:

Raw Pumpkin Pie

CRUST

2 cups pecans soaked overnight, dehydrated You can do this with a dehydrator or in the oven at the lowest temp possible. Check info on dehydrating using an oven

½ cup dates, soaked 20 mins.

FILLING

2 cups pumpkin meat. Buy organic as long as you’re going for raw and healthy

1 cup dates, soaked 20 mins.

½ cup almond butter

2 tsp. cinnamon

1 tsp. grated ginger

½ tsp. cloves

½ tsp. nutmeg

¼ tsp. cardamom

¼ cup water or apple juice

 

Combine pecans and dates in food processor. Press crust into pie plate.  Combine filling ingredients in food processor or high speed blender. Spread evenly over crust.

 

WHIPPED CREAM

Blend the following:

1 ½ cup nuts, soaked at least two hours (I used walnuts, so does Brigitte)

½ cup fresh orange juice (or water you used to soak the dates)

2 TLBSP. soaked dates

a few drops almond extract

1 or 2 tsp. vanilla

 

And in case you are wondering, I have two regular pumpkin pies on the table also.  One thing I’ve learned very well, people are resentful if something is forced on them, but they might take a piece to check it out alongside their old tried-and-true pie.  Good luck!
